Crime Inc. above all else. It has great authenticity, especially considering it was so revealing about the mob back when it was still going strong. Love the creepy, dark intro with that early 80s tune. In one of its episodes they even showed footage of Gotti in action at the garment center before he rose to fame. Ofcourse the interviews with Jimmy Fratianno and the other CW's is what makes it so great.
The Canadian CBS made a very similar documentary called Connections a few years earlier of which there are fragments on Youtube.
NGC's documentary Inside the Mafia (2005) and its follow-up Inside the American Mafia and ofcourse the Underworld series are good additions too.
And the British The Mafia's greatest Hits which is more or less an unofficial sequel to Crime Inc.
