Taking bets, collecting money, making loans, and learning the ins and outs of running gambling, bookmaking, and loansharking operations.

An associate is sort of like an employee who helps his organization make money but is also being sized up to see if they have management potential. Associates who are Italian and show promise will eventually be proposed for induction, and those who don't will eke out a living as a low-level grunt.
