If any mobster could talk
This question may be a bit GBBish but I was curious. If you can pick pick the brain of any mobster, living or dead, who will it be? He will of course be totally honest and truthful about everything he knows be it every made guy and every murder he has ever heard about as well as the full successions and general history that he was privy to.
It is tough for me but I wll have to go with Joe Morello. He could fully explain the creation of the 5 families and and just about every major player and the full succession of the era. He could probably ID all of the first members of the Genovese and Lucchese families as well.

My interest being Chicago, I'd say either Tony Accardo or John DiFronzo. That would pretty much cover the last seventy years of Outfit history.

Living - Sal Profaci. He was made when his father was still the boss and after his father died was a close aide to Magliocco for a few years. He was also well-connected nationally and traveled on behalf of the NY families and was a messenger for the Commission during the Bonanno war. He must have some knowledge of the family before his father took over.
Dead - Tough to narrow it down. With all of the DeCav talk I would say Frank Majuri, but would also kill to have some more information on the Philly family pre-1920 so pretty much anyone who was a high-ranking member back then.

Going on the rule that they would be 100% honest, I would choose Joe Bonnano for the focus of LCN origin and East Coast history. Maybe even Sam Giancana for the Chicago 411?
However, above all, I would most likely choose Tony Accardo. I've always been interested in The Outfit and who would know more? Chicago has always been unique in their day to day operations. Also, I would like to have the truth about JFK and November 22, 1963 once and for all.
I would like to know the nuts and bolts of implementing such procedures that ensured their success.

From a scientific point of view, aimed at studying psychology in general and psychological problems, I think the best candidates would be:

Roy DeMeo
James "Fur" Sammons
Nicky Scarfo
Tommy Pitera
Otherwise, I would choose:
Paul Ricca (being the brains behind the Chicago Outfit, likely superior even to Accardo)
Salvatore D'Aquila (was boss of bosses for quite a long time, even during Prohibition which was a "golden age" period for organized crime)
Lucky Luciano (due to his key role in organizing the commission)
Al Capone (would really like to ask him how did he become one of the most famous gangsters in American history, even being considered by many as dumb as a piece of wood, including members of his own organization)
Vito Cascio Ferro (to ask him whether him having participated in the Petrosino murder is complete bullshit or did he really have some part in it)

Morello, D'Aquila for obvious reasons, and Frank "Punchy" Illiano because of what he could tell us about both the Profaci and Genovese families from the 50's till he died.
