Out of the New York families it's about 5%. For context, to work this out I referred to figures quoted in an AGI article from 2021 (Paolo Borrometi, 'Mafia: Italia-America, la nuova mappa del crimine',

Genovese - 175
Gambino - 165
Bonanno - 132
Lucchese - 121
Colombo - 90
It's more difficult to say what the percentage would be for remaining cosa nostra families and remnants across the country. I'd imagine the percentage incarcerated would still be around 5% when factoring them in.
It's a considerable descrease from a few decades ago. In 1993, the FBI calculated that 17.79% of all cosa nostra members were incarcerated:
